Bread & Butter, Home Made
23 March 2009 | By Ian in Misc
It only took a few minutes in the food processor to turn a quart of heavy buttermilk into one of the tastiest butters I’ve ever had. The transition from creamy liquid into butter is almost instantaneous and is very interesting to watch.
The leftover buttermilk went into a quick and easy batch of bread machine bread. A few hours later, we had a great homemade treat.
Buttermilk costs just over $2 a quart here. The yield was just under 2 lbs of butter. That’s about a 60% savings per pound for a better product than you can buy at Safeway or QFC.
I’ll be making my own butter from now on.

Is this for real? This would give me a lot of savings. I wonder how many minutes exactly would it take to make the butter completely ready. I’m still a beginner in baking so I’m really cautious not to waste any materials and ingredients. Thanks for the tip. I’ll try it one of these days.

@Jane
This ended up working well, but I realized too late that I made a mistake making the butter. There is a lot more whey in the butter than you think and you must wash the butter thoroughly before putting it in storage. Otherwise the whey will go bad and take the butter with it.
To wash your butter, simply put it in your blender or food processor with a couple cups of cold, fresh water. Run it until the water turns milky and repeat until the water is clear after processing (5-8 runs).
The last time I made butter, it took about 1 hour to complete and it was well worth it.
